A big, juicy cucumber that I can eat whole like a burrito. Forget slicing it up!

Alright, I'll stop being mean. But still. This doesn't change the fact that I want cucumbers. Crunchy, cool, healthy... I'm not helping myself by typing this. I'll stop now.

How about some cucumber sandwiches? Those sound sooo good right now...

This recipe was created for larger groups...... but it can be cut in half of course, If you don't want to make 80 quarters of sandwiches. Even 40 seems too many... oh well. Do with it what you will.
CUCUMBER SANDWICHES
- YIELD: 80 quarters
INGREDIENTS:
- 1 (8-ounce) package cream chees, softened
- 1/3 cup mayonnaise
- 1 medium cucumber, peeled, seeded, and finely chopped
- 1/4 teaspoon farlic salt
- 1/2 teaspoon chopped fresh dill
- 20 sandwich bread slices
- 20 thin wheat bread slices
PREPARATION
- Process cream cheese and mayonnaise in a blender or food processor until smooth, stopping once to scrape down sides.
- combine cream cheese mixture, cucumber, garlic salt, and dillweed.
- Spread cucumber mixture evenly onto white bread slices, and top with wheat bread.
- Cut crusts from bread, discarding crusts, and cut sandwiches into quarters.
- Store cucumber sandwiches in an airtight container for up to 1 hour before serving.
